In light of my husband’s health crisis, we had to prioritize everything that could help address the issue. I wasn’t feeling my best either. With being on my feet nearly every day, my body was struggling, and my weight was taking a toll on me. That served as a strong motivation that propelled us forward in the beginning.
Believe it or not, we were actually on a cruise for our summer vacation, haha! I was incredibly proud of my husband for sticking to the low-carb plan.

The picture captures our first meal. Despite being surrounded by tempting treats, we managed to do pretty well overall. I won’t say I was completely disciplined, though—because I definitely wasn’t, haha!
I once had a strong fondness for flavored coffee creamers. However, I’ve come to appreciate the taste of unsweetened cream. We discovered a variety of sweetener choices, and the options are truly endless. When going out my favorite is Stevia. When I’m at home cooking, I prefer Monkfruit. Monk fruit sweeteners tend to have a clean, sweet taste that is often described as more rounded and less bitter compared to Stevia. Monk fruit is generally regarded as having a flavor profile that is closer to sugar. I have to accept that the biggest challenge for us was definitely the absence of sugary treats. However, as soon as we made a firm commitment to improve our home, progress started to unfold.
Exploring alternative options for enjoyment requires a significant amount of learning and discipline, and we must acknowledge that upfront. Thanks to the modern world, researching online has made exploring new options easier than ever before.
